Father's Day Weekend 2014

Friday-
We pretty much just cleaned house and got the spare bedroom ready for our visitors.  When we were finished, we got caught up on our DVR recorded weekly shows and then hit the hay.

Saturday-
Damon's folks came out to spend Father's Day weekend with us.
 
Knowing his family was coming out, we had already planned a make-at-home dinner for Mom and Dad, but we were really surprised when they offered to take us to "Jake's Pizza" in West Fork for dinner Saturday night! 
 
Living where we do, we don't usually get the opportunity to eat at restaurants very often, so that was a tasty and wonderful surprise to get to go to Jake's for a yummy veggie salad and way too much pizza (and I'm so mad I forgot to take a picture of those amazing pizza pies)!
 
Thank you Mom and Dad for surprising us by treating us to dinner out on Saturday night!!!

Sunday-
Happy Father's Day!!!
Dad had mentioned that he loved the homemade pies that "Grandma", the owner of our only local restaurant "Grandma's House CafĂ©", makes and offers on her lunch buffet.  
 
So, for Father's Day,  we wanted to take Dad out to lunch at Grandma's House.  Grandma's is always a good place for some good, stick to your ribs, southern home cooking, not to mention that she offers 9 different kinds of homemade pies on her lunch buffet!  
 
So, for Father's Day lunch, we went to Grandma's buffet and we all ate entirely too much. We were all so full after the buffet lunch, and all the pies, that none of us wanted to move.

Anyway, after waddling our behinds back to the car, we headed home and just hung out, fought off the food-coma, watched some TV, talked, and strolled the grounds around the house.

Then, much later in the evening, when people started to get hungry again, we started to make Dad his Father's day celebration dinner.  

We started it off with a glass of chilled red wine and a classic Caesar salad, as the first course.  Then we quickly moved on to making Chicken Parmesan, as the main course. 

The first thing I did was to make the homemade marinara sauce....

Then, I butterflied the chicken breasts, coated them with panko breadcrumbs, and pan-fried them in olive oil.

Then we topped the breasts with the homemade Marinara sauce, whole milk Mozzarella cheese, Parmesan cheese, then finish them off in the oven...


Lastly, we serve them on a bed of fresh cooked pasta with a little fresh Basil garnish....

It turned out pretty awesome if I do say so myself!
